Guarantor self employed ..asking for 3 years account details ?

I'm renting a flat and my dad has agreed to be the guarantor for me if u didn't pay...the letting agency said they want proof of accounts of 3 years because he is self employed .. what will we need to show them and ..how do u normally show it.??
